Every restaurant operator knows the grease trap exists. Far fewer treat it as the piece of infrastructure most likely to shut down a location on a Friday night. Grease trap service is one of the smallest recurring line items on a facility budget — and neglecting it is one of the fastest ways to turn a $300 pump-out into a five-figure problem.

What the grease trap is actually doing
A grease trap (or larger grease interceptor) sits between your kitchen drains and the sanitary sewer. Its job is simple: slow the wastewater down long enough for fats, oils, and grease — FOG, in industry shorthand — to cool, separate, and float to the top, while solids settle to the bottom. Relatively clean water exits to the sewer.
That separation only works when there's room in the tank. As the grease layer and solids build, the trap's effective capacity shrinks. Past a certain point — many municipalities use the "25% rule," where combined grease and solids can't exceed a quarter of the trap's depth — the trap stops trapping. FOG passes straight through into your building lateral and the city main.
How neglect turns into real money
The failure sequence is predictable, and each stage costs more than the last:
- Slow drains and odors. The first symptoms show up in the kitchen: floor drains that gurgle, a three-compartment sink that won't clear, a smell near the dish pit that no amount of cleaning fixes. Staff work around it. Nobody files a ticket.
- The backup. Grease hardens in the lateral line downstream of the trap. Eventually wastewater has nowhere to go but backward — up through floor drains, usually during a rush, because that's when flow peaks. Now you're mopping gray water in a food-service environment, and depending on your health department, that can mean an immediate voluntary closure.
- The emergency call. After-hours hydro jetting to clear a grease-packed line routinely costs several times a scheduled pump-out — and that's before you count lost sales from a closed dining room and the labor you paid to send home.
- The municipal problem. Cities monitor FOG discharge because grease is a leading cause of sanitary sewer overflows. If an inspection or a sewer blockage traces back to your location, expect fines, mandated service schedules, and follow-up inspections. Some jurisdictions publish violators. That's a brand problem, not just a facilities problem.
- The long-term damage. Chronic grease exposure degrades pipe interiors and shortens the life of the drain system itself. What was a pumping schedule becomes a re-pipe conversation.
Industry data consistently shows FOG among the leading causes of sewer blockages and overflows — which is exactly why enforcement keeps tightening.
Why "cheap" habits make it worse
Neglect rarely means the trap is never serviced. More often it's serviced badly:
- Skimming instead of pumping. Some low-cost vendors remove only the floating grease layer and leave the settled solids. The tank looks serviced; the capacity problem remains.
- Stretching intervals to save money. A trap sized for quarterly service at one sales volume may need monthly service after a menu change adds a fryer. Service frequency should follow kitchen output, not the original contract.
- Relying on additives. Enzyme and bacterial dosing products can emulsify grease enough to pass through the trap — which just moves the clog downstream, where it's more expensive to reach. Many municipalities restrict them for exactly this reason.
- No documentation. If you can't produce pump-out manifests, you can't prove compliance to an inspector — and in a dispute with a landlord or the city over a blocked shared line, records decide who pays.
What a well-run program looks like
For multi-site operators, grease trap management is a scheduling problem, not a technical one:
- Right-size the interval per location. Base it on actual FOG accumulation, not a one-size-fits-all quarter. A high-volume fry kitchen and a salad-focused fast casual should not share a schedule.
- Require full pump-outs. Every service should remove all contents — grease cap, water, and solids — with the tank inspected and baffles checked before refill.
- Keep the paper. Manifests, service dates, hauler licenses, and disposal records should live in one system, retrievable per location in minutes when an inspector asks.
- Train the kitchen. Dry-wiping pans before washing, proper fryer oil disposal, and strainers on drains extend the interval more than any additive.
- Pair it with line maintenance. Scheduled jetting of kitchen drain lines on high-volume sites catches the buildup the trap doesn't.
The math is not close. A disciplined pumping program across a 20-location portfolio costs a fraction of a single emergency backup with a closure attached. Grease trap service is the rare facility expense where the cheapest realistic outcome is also the well-managed one.
